When you should password-protect a PDF

What kind of protection is this?

Choosing a password that's actually useful
A password that's trivially guessable defeats the purpose — your own name, your date of birth, or "password123" stop almost nobody. At the same time, this isn't a bank vault: for everyday sharing of a payslip or a report, a password that's simply not obvious (not your name, not a common word, ideally mixing letters and numbers) is enough to stop casual exposure, which is the actual threat model for most personal document sharing.
Protecting a batch of similar documents
If you're sending payslips to several employees or statements to several clients, a shared team password across every file defeats the purpose the moment one recipient forwards their copy — anyone with that password can then open everyone else's file too. Use a distinct password per recipient wherever the content is meaningfully different between them, even if that means a slightly repetitive process for each file.
